Celebrating Graduation & the Class of 2011

So the big day is almost here. My first child is graduating from high school next week. Although I knew this day would come, it always seemed like such a long way off when he was in preschool, or playing t-ball, or even when he transitioned from middle school to high school just four years ago. (I’m getting teary-eyed as I write this!) I just can’t believe he’s 18 and will be away at college very soon.

Of course we want to celebrate his hard work and accomplishments, so we’re going to have an open house for family and friends. Because we live in South Florida, and it’s already blazing hot out, I decided to keep the menu simple and to stick with foods that don’t have to be served hot.

Cap and Gown Punch RE Celebrating Graduation & the Class of 2011

I think it’s fun to have a variety of tastes and textures, so I’m going with a few different Mr. Food salads, like Crunchy Asian Salad, Blue Watermelon Walnut Salad, to which I’m going add some grilled chicken to make it a bit more filling, and a pretty Chilled Stacked Salad.

I’ve already been baking and freezing some sweet treats like Chocolate Chip Biscotti (which are perfect for freezing!) and a few other yummy cookie and bar recipes.

Of course, everyone loves a good chilled punch on a hot day! I think it will be appropriate to serve Mr. Food’s Cap and Gown Punch which I can make a double or even triple batch of right before the guests start arriving. (I even bought some cute graduation cap ice cube molds, to go along with the theme! Those will look so cute floating in the punch!)

All the preparations and cooking will keep me busy over the next week, which will help keep my mind off the bittersweet fact that my little boy is all grown up! Happy Graduation Corey!
